Producing just one kilogram of saffron can require around 230,000 flowers, according to peer-reviewed research. Behind those delicate crimson threads are place, cultivation, and generations of knowledge. For us at Noosh, that sense of origin matters.
Our story begins with hand-harvested saffron from Marand in the mountainous northwest, and hand-harvested rose petals from Aran & Bidgol in the central region of Iran — two Persian botanicals at the heart of our gins. These regions are known for cultivating the botanicals that define our two expressions, Marand Saffron Gin and Aran Rose Gin, connecting each bottle to the origin of its signature botanical.
From there, the journey continues in Canada. Our production begins in British Columbia, where the neutral grain spirit at the heart of Noosh is crafted from BC-grown grains. It then moves through careful gin distillation, followed by the finishing process that gives each expression its distinct character.

Noosh Gin brings together signature Persian botanicals, classic gin botanicals, and Canadian craft distillation. Both expressions are products of Canada. Founded in Vancouver in 2024, Noosh was created with a vision to bring Persian botanical heritage into Canadian craft spirits. Our first bottles were released in December 2024, marking the beginning of that journey.
Great gin begins with thoughtful sourcing. For us, place shapes the flavor before distillation starts. Marand saffron and Aran & Bidgol rose carry different aromas, colors and cultural memories.

Before the gin botanicals enter the process, we first need the spirit that will become Noosh.
Our neutral grain spirit is crafted in British Columbia from BC-grown grains, creating the foundation for both Marand and Aran. From fermentation through distillation, producing the base spirit typically takes close to three weeks before the gin-making process can begin.
From here, Marand and Aran follow their own paths.
For Marand Saffron Gin, hand-harvested saffron is infused during the finishing stage, after distillation. This allows the saffron to impart its distinctive aroma, character and naturally golden colour to the finished gin.
For Aran Rose Gin, the hand-harvested Persian rose petals have already become part of the spirit through the overnight infusion and distillation process, creating its delicate floral character.
These different approaches allow each signature botanical to express itself in a way that best captures its individual character.
Copper-pot distillation sounds technical, though the basic idea is simple. A clean neutral spirit enters the still with carefully measured botanicals. Heat lifts aromatic vapors from juniper, citrus, saffron, rose and spice.
As those vapors cool, they return to liquid. The distiller follows the run and keeps the portion with the best balance. Small batches allow closer attention to aroma and texture.
Our Marand saffron gin is handcrafted in small-batch copper-pot stills. Both Noosh expressions are crafted in Canada with Persian botanicals.
After distillation and botanical finishing, each gin is carefully brought to bottling strength and then allowed to rest for several days. This resting period gives the spirit and its botanical elements time to integrate, allowing the aromas and flavours to settle into their final balance before bottling.
Marand carries its naturally golden-yellow colour from saffron, while Aran has its distinctive soft rose hue, complementing its floral character.
Once rested and checked for balance, each batch is bottled, completing a journey that begins with Persian botanicals and continues through Canadian craft production before ultimately arriving in your glass.
